It’s oh so cold outside and I feel like having a nourishing, warm, healthy and easy to prepare soup. The only thing you need to keep in mind is to soak the chickpeas for at least 3 hours before cooking them. The rest is really really easy…
Ingredients:
1 cup chickpeas, soaked in water for at least 3 hours and then filtered
2 large potatoes, peeled and diced
1 Leek, cut
1 Parsley root, peeled and cut
1 Turmeric root, peeled and grated (it’s the season!)
2-3 garlic cloves, crashed
1.5 cups Fresh Spinach
2 Star Anise
1 Cinnamon stick
1 teaspoon Curry OR Hawaij Powder (according to your preferences)
1 teaspoon organic vegetable soup powder
1 teaspoon cumin powder
Preparation:
1. Sweat the leek, roots, garlic, then add salt, cumin powder, curry/hawaij, vegetable soup, star anise and cinnamon
2. Add the chickpeas, stir
3. Add water, bring to a boil and cover, cook for 30 minutes
4. Add the potatoes and cook for another 45 minutes (if lazy, add the potatoes from the beginning)
5. Add the washed spinach and continue to cook for another 15 minutes
Adjust flavors and enjoy!
According to Chinese Medicine Nutrition, spices such as cinnamon, star anise, turmuric, garlic of course, and the curry powder or the Hawaij are all of a distinct warming nature and are beneficial for extra cold days.
