Once in a while, I share a sweet recipe. This one is as healthy as it gets. Of course, what always matters most is how much you eat of it (and other carbs).
What’s inside?
1½ cups spelt flour
1¼ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
1/8 teaspoon salt
2 eggs
1 cup mashed ripe bananas (about 2–3 bananas)
¼ cup brown sugar or coconut sugar
¼ cup olive oil
½ cup chopped walnuts
¼ cup 70% dark chocolate chips or chunks (optional)
How to?
Preheat oven to 180°C (350°F).
In a large bowl, mix all the dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.
In a separate bowl, whisk the eggs, then add the mashed bananas, sugar, and olive oil. Mix well.
Combine the wet and dry mixtures, stirring until you get a smooth batter.
Fold in the walnuts and chocolate chips/chunks if using.
Pour the batter into a loaf pan lined with baking paper or greased with olive oil.
Bake for about 45 minutes, or until a toothpick comes out clean from the center.
