Healthy-ish Banana Bread with Olive Oil Twist

Once in a while, I share a sweet recipe. This one is as healthy as it gets. Of course, what always matters most is how much you eat of it (and other carbs).


What’s inside?

  • 1½ cups spelt flour

  • 1¼ teaspoons baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon ground cinnamon

  • 1/8 teaspoon salt

  • 2 eggs

  • 1 cup mashed ripe bananas (about 2–3 bananas)

  • ¼ cup brown sugar or coconut sugar

  • ¼ cup olive oil

  • ½ cup chopped walnuts

  • ¼ cup 70% dark chocolate chips or chunks (optional)


How to?

  1. Preheat oven to 180°C (350°F).

  2. In a large bowl, mix all the dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.

  3. In a separate bowl, whisk the eggs, then add the mashed bananas, sugar, and olive oil. Mix well.

  4. Combine the wet and dry mixtures, stirring until you get a smooth batter.

  5. Fold in the walnuts and chocolate chips/chunks if using.

  6. Pour the batter into a loaf pan lined with baking paper or greased with olive oil.

  7. Bake for about 45 minutes, or until a toothpick comes out clean from the center.
