Homely Healthy Pancake Breakfast in Corona Times
What's in it? (enough for 12 respectable or 24 small pancakes): 1 Cup and a half of 70% Spelt flour (what I had. No reason to use unhealthy white flour. Grind thin Quaker to make Quaker flour)
2 eggs
½ cup of almond, regular or soy milk
½ cup of yogurt (I used Greek yogurt, but whichever you have)
2 tablespoons melted coconut oil
1 teaspoon of baking soda
1 teaspoon and a half baking powder
1 teaspoon of vanilla extract
Pinch of salt
