1 medium onion, sliced
2 tablespoons of olive oil
2 packs of mushrooms (champignons and oysters are recommended)
1 teaspoon Baharat (7-spice blend-black pepper, cumin, coriander, paprika, cardamom, cinnamon, cloves)
1.5-2 cups of hot water
A tablespoon of miso (light or dark, according to preference)
300 grams of tofu, cut into cubes
2-3 bok choy units, cut into large pieces
How do you prepare?
Heat olive oil in a deep pot and fry the onion until golden
Add the mushrooms to the pot and fry until they soften a little
Add a teaspoon of Baharat to upgrade the flavors
Dissolve a tablespoon of miso in a cup and a half to two cups of hot water, and pour the mixture into the pot. Bring to a light boil.
After 5-10 minutes, when the liquid reduces a little, add the tofu cubes. Mix gently and pour the sauce over the tofu so that it absorbs the flavors.
Raise the heat, add the bok choy and cook for another 5 minutes, until it softens but remains crunchy.
