The current season is characterized by dry and cold winds. This spread is made from nurturing ingredients (such as beets and sesame seeds, Yin nurturing according to Chinese medicine) as well as ingredients that will make the spread lighter (such as garlic, ginger, daikon/radish, Qi Movers according to Chinese medicine).
This creates a perfect healthy, moisturizing, tasty spread that is light and makes the perfect sandwich for you and your child. If it looks like kidney, it does actually supports the kidneys too :)
What to buy?
2-3 fresh or vacuum-ready beets
4 tablespoons of Tahini (any kind you like)
1 lemon, freshly squeezed
2 tablespoons of water
1cm fresh ginger
1cm Daikon or 1 radish, grated
S & P
For the perfect sandwich: sprouts
What to do?
Perforate the beets, wrap in foil, bake at 180C for about 45 minutes. Cool, peel and cut into cubes. Alternatively, use vacuum ready & peeled beets (note - not as healthy as the fresh ones).
Combine the beets, tahini, lemon, water, garlic, ginger, daikon/radish and process in a blender until a smooth uniform texture. Adjust flavor with S & P.
