Hannukah's here! Time for Healthy Chestnuts Latkes

For Chanukah, here is a recipe for sweet and savory Latkes/Levivot

Butternut Squash and Chestnuts Latkes

Sweet Version Medium squash, peeled, halved, de-seeded A cup of chestnuts, boiled and peeled - crushed into small pieces A tablespoon of flour, may also be potato/chickpeas 1 teaspoon of maple, honey or Silan (Dates paste) - according to your desire

  1. Place squash facing down on a baking paper brush with olive oil and into the oven

  2. After 50-60 minutes, remove from the oven, mash into a puree

  3. Mix with all other ingredients and create latkes/patties/levivot

  4. Fry or bake in the oven

Serve with sour cream and sour cream (to balance the sweetness)

Savory Version Medium squash, peeled, halved, de-seeded

A cup of chestnuts, boiled and peeled - crushed into small pieces

A tablespoon of flour, may also be potato/chickpeas A tablespoon of crushed ginger One onion, grated thinly 1 Tablespoon, Soy Sauce 1 Teaspoon Peanut Butter

  1. Place squash facing down on a baking paper brush with olive oil and into the oven

  2. After 50-60 minutes, remove from the oven, mash into a puree

  3. Mix with all other ingredients and create latkes/patties/levivot

  4. Fry or bake in the oven

Serve with a sauce made of soy, garlic and Mirin
