Okra also lubricates the lungs, for those suffering from dry cough
I served it with my favorite super-grain Millet. Can be replaced by whichever you prefer.
Ingredients:
3 shallots
3-4 beets, cut into cubes
12-15 fresh okra (Lady Finger) pods, trim off the top of the pod
Curry Powder (any type you like – Mild to Wild, Thai-Indian-Cambodian)
½ ginger root, grated
5-6 ripe tomatoes, chopped finely to make a sauce OR canned organic crushed tomatoes
2-3 garlic cloves
½ can coconut milk
Coconut oil
How to?
Chop shallots and garlic, fry them lightly in coconut oil
Add okra pods and stir lightly
Add chopped tomatoes, curry powder, beets. Stir and simmer for 30 minutes
Add grated ginger & coconut milk
Adjust fluids as needed
For the millet: 1 cup rinsed millet to 1.5 cups of water. Bring to boil, reduce heat and simmer for 20-25 minutes
