What's in it? (enough for 12 respectable or 24 small pancakes):
1 Cup and a half of 70% Spelt flour (what I had. No reason to use unhealthy white flour. Grind thin Quaker to make Quaker flour)
2 eggs
½ cup of almond, regular or soy milk
½ cup of yogurt (I used Greek yogurt, but whichever you have)
2 tablespoons melted coconut oil
1 teaspoon of baking soda
1 teaspoon and a half baking powder
1 teaspoon of vanilla extract
Pinch of salt
(Please note: I did not add sugar because pancakes are always served with either maple, honey, nutella or fruits, so no need for extra)
How to make?
1.In a large bowl, mix the dry - flour, baking powder, baking soda, salt
2. In a separate bowl mix the liquids - eggs, milk, yogurt, coconut oil, vanilla extract
3.Add the liquids to dry and mix with manual beater until uniform
4. Heat a frying pan and grease with butter, ghee or coconut oil (rather than oil spray).
5. Pour a tablespoon full of batter, fry 2-3 minutes until you begin to see holes in the pancakes and turn for another 2-3 minutes
6. Serve with fruit - we had it with fresh strawberries, berries, apple, orange, mint. But the sky is the limit :)
